Once you have practiced this once and know how long it takes to bake then you will be on your way to success. Remember that temperatures differ at a higher altitude so this is where a minute or two will make a difference.

The funny thing is that we are simply repeating somebody's mistake, which has been turned into an instant success so don't ever think that you have failed with anything in the kitchen. You may have just come up with a masterpiece! Take, for example the Eton Mess, which was a normal dessert to be served at the famous school, Eton. It was unfortunately dropped by a chef on the kitchen. However, he simply rearranged it and put it back together again. As a result we have another fantastic dessert.

Let's get back to basics with this great tasting dessert:

This is probably one of the easiest recipes that you have seen in your life which should give you some confidence.

  • 125g (4.5 oz.) good quality dark chocolate
  • 125g (4.5 oz.) butter
  • 2.5 eggs
  • 1 Tbsp cocoa powder
  • 100g (3.5 oz.) flour
  • 100g (3.5 oz.) sugar

  1. Melt the butter and the chocolate
  2. Whisk in the eggs
  3. Fold in the dry ingredients
  4. Grease and flour in the mould and then pour the mixture in and refrigerate this before baking (about 1 hour). Grease this well if you are going to be turning them out onto a plate.
  5. Bake for about 12 minutes or until they are cooked

This dessert goes very well served with a scoop of vanilla ice-cream. Make sure you use good quality ingredients because the whole thing about this dessert should spell simplicity. You don't want to dress it up by creating sauces because of the poor quality ingredients.

It's great when you turn the cake out on a plate and garnish it with a few berries and a dollop of ice-cream, but you can also just serve it in a mug for something different or even a ramekin.
