A Classic Chocolate Sauce Recipe

I learned this chocolate sauce recipe from someone training to be a pastry chef, so you can be sure that it is flop-proof!

Chocolate sauce can be used in a variety of ways and it is something easy to make with your kids. It can be used in so many different ways from drizzling it on vanilla ice cream to using it as a ganache. I have used a basic chocolate sauce recipe here, but the beauty of it is that you can be creative with it and add your own variations. Using white chocolate will make a nice change, depending on what you are doing.


  • 50g dark chocolate - at least 70% cocoa solids
  • 100ml cream


  1. Heat the cream in a sauce pan
  2. When the cream is hot, take it off the heat and add the chocolate
  3. Mix it up until you have a smooth sauce

Yes, it is truly as easy as that!

If you want a white chocolate sauce, then simply exchange the dark chocolate for white chocolate.

Turning the Chocolate Sauce Recipe Into a Recipe for Ganache

Chocolate sauce can be used for more than just drizzling over ice-cream and decorating marshmallows. You can have a lot of fun using the same basic recipe for making cake decorations or even chocolate truffles.

This can be a challenge, but at the same time it can be a huge reward once you have made it a couple of times.

The basic chocolate sauce recipe can be turned into a ganache or a mixture that you will use to make truffles, but you will have to alter the recipe somewhat.


  • 150ml cream
  • 250ml good quality chocolate


  1. Heat the cream, remove from the heat and add the chocolate.
  2. Mix the ingredients together until you get a smooth consistency and then leave it in the fridge until it goes hard.
  3. If you want to make truffles, take this out the fridge and leave it for a few minutes so it is easy to roll.
  4. Roll the truffles into small balls, leaves one third of the chocolate behind, which you will melt.
  5. Put the truffles back in the fridge to harden and then dip them in the melted chocolate.

This is kind of messy, but a fun exercise for the whole family to get involved in. It's great to use different kinds of fillings like nuts or flavorings.

If I want to make a cake really special, then this is where a ganache will come into play. Use the same method as you would, above, but don't put the chocolate in the fridge. Pour the melted chocolate straight onto the cake. This will harden and when you taste this you will be in heaven!

Another thing to get stuck into are decorations. You have probably been to a restaurant and been served a gourmet dessert, topped with a chocolate garnish. Yes, it is possible to do this yourself.

By making this classic chocolate sauce, filling a small paper piping bag and waiting a minute or two, you can make some really cool designs that Picasso will be proud of. Use your imagination and be creative. This is what cooking is all about, after all!
