Have a springform pan handy for this exercise because it will help with the appearance and they are just so easy to handle. We are going to use good old, trusty Oreos to make this chocolate peanut butter pie recipe here. Oreos have a great flavor and they work well. You can use other types of cookies or a basic pastry, flavored with cocoa, but this is really easy to do.

Pastry Case

  • 25 Oreos
  • 4 Tbsp butter, melted
  • 6 oz (170g) plain chocolate
  • 1/4 cup cream

  • 1 1/2 cups milk
  • 2 eggs
  • 1 cup caster sugar
  • 2 Tbsp cornstarch
  • 1 pinch salt
  • 4oz. (110g) cream cheese
  • 1/2 cup creamy peanut butter
  • 1 tsp vanilla extract

  • 2 oz. (55g) plain chocolate
  • 1 1/4 heavy cream
  • 1 Tbsp caster sugar

Pastry Crust

  1. Blend the Oreos and add the melted butter so they resemble fine crumbs.
  2. Press these together into the bottom as well as the sides of your pan
  3. Place the pan in the oven for about 5 minutes just so it sets.
  4. Remove it and let it cool down
  5. Heat the cream and add the chocolate off the heat, combining until it is smooth, and then spread the chocolate over the crust.
  6. Freeze the crust while making the filling.

  1. Whisk the eggs, caster sugar, milk and cornstarch as well as the salt in a medium sized saucepan. Whisk this until it starts to boil and cook for another 2 minutes before you transfer it over to a bowl.
  2. Whisk in the cream cheese, vanilla extract and the peanut butter.
  3. Use a spatula to spread this mixture evenly over the chocolate and place it in the refrigerator overnight.

  1. Melt the chocolate in the microwave, keeping an eye on it. Stir it every 30 seconds until it is smooth and then cool it slightly.
  2. Whip the cream with the caster sugar until it holds peaks.
  3. Stir a big spoon of cream into the chocolate and fold all of the chocolate into the cream.
  4. Refrigerate the pie for another 30 minutes before you serve the pie.

You can make this pie in a couple of different forms. You don't just have to stick to the springform variation which you have to then slice up. You can use a muffin tray of varying sizes or you can even do something different and use the mixture inside another kind of pastry like filo of puff pastry.

You can also choose a couple of different toppings as something different. You may even like to turn this into a meringue pie. It's always good to create a little texture. There are also some fantastic sauces out there that are easy to make and will give you pie the edge. Just make sure you don't go over the top. It's important to keep the balance.
