Chocolate Chip Muffin Recipe

Here is a basic chocolate chip muffin recipe to get you started , chunky chocolate and blueberry muffin variety below to make it more interesting.

There is no doubt; just about everyone loves a good old chocolate chip muffin. You don't need to stop off at the side of the road to have one of these or get out the plastic knife and fork if you are travelling. They are just so convenient and can be just the thing to fill the gap. However, there is nothing worse than a chocolate chip muffin recipe which is heavy and feels as though it has been on the shelf for a few days.

Even though one of these may just have come out of the oven, if you haven't got the right quantities of flour or liquid then it just won't be the same.

Ingredients

  • 100g butter
  • 100g brown sugar
  • 200g flour
  • 2 t baking powder
  • 1 egg
  • 125g chocolate
  • 100g chocolate chips
  • 50g cocoa
  • 200ml milk

Directions

  1. Sift the dry ingredients
  2. Stir in the sugar
  3. Melt the butter and beat with egg and milk
  4. Mix the wet with the dry ingredients
  5. Bake at 200 degrees C /375 degrees F/ gas mark 5 for 15 minutes

How easy was that! Many people think it is all about the size of the muffin and that is the only thing that counts. If you think bigger is better, then you can always experiment with this by doubling up. This is a very basic recipe, but it is up to you what you want to do to make it that much more special. We also like to make a nice topping just to finish it off. This could be a ganache or a contrast between white and dark chocolate. Don't forget about bite-size muffins either. These are a great for a snack or to put in your child's lunch box as a nice surprise.

Chunky Chocolate and Blueberry Muffins

Here is another variation, using another recipe. It is also simple and it is also tasty. You can also use white chocolate for this recipe just for a change. Here we are going to add in nice bits of thick, chunks of chocolate, but you can stick to chocolate chips if that is what you would rather prefer.

Ingredients

  • 50g (2oz) cocoa powder
  • 200g (7oz) self-raising flour
  • 2 teaspoons baking powder
  • 100g (3 1/2 oz) brown sugar
  • 125g (4oz) plain or white chocolate, chopped
  • 125g (4oz) blueberries
  • 1 egg
  • 200ml (7 fl oz) milk
  • 100g (3 1/2 oz) butter, melted

Directions

  1. Line a medium sized muffin tray with paper muffin cases.
  2. Sift the cocoa, flour and baking powder into a bowl and add the chocolate and bluberries
  3. Beat the egg with the milk and melted butter. Add this to the dry ingredients, stirring them together until just combined. You should see specks of dry flour in the mixture.
  4. Divide the mixture among the paper cases and bake in a preheated oven at 200 degrees C / 400 degrees f / gas mark 6 for about 15 minutes until risen and firm.

Serve the muffins slightly warm.

There are many more recipes like this. You don't just have to use plain old chocolate chips. Combining them with something else that goes well can add a lot of interest. Think of putting in some nuts or something else that will add texture. A cappuccino muffin is great with a little espresso spread on the top.
