Amazing Chocolate Brownie Recipe!

This chocolate brownie recipe goes great with home made ice cream!

The first recipe we include is a cookies and cream fudge variety of a recipe by Lorraine Pascale that we came across on the BBC.

We'll give you both the US and the metric versions for convenience.

Ingredients

US

  • 5½ oz butter
  • 7oz grated dark chocolate
  • 3 eggs
  • 2 egg yolks
  • 2 tsp vanilla extract
  • 5½ oz soft light brown sugar
  • 2 tbsp flour
  • 1 tbsp cocoa powder
  • Pinch salt
  • 5½ oz pack Oreos, broken into quarters
  • Icing sugar

Metric

  • 165g butter
  • 200g grated dark chocolate
  • 3 eggs
  • 2 egg yolks
  • 2 tsp vanilla extract
  • 165g soft light brown sugar
  • 2 tbsp flour
  • 1 tbsp cocoa powder
  • Pinch salt
  • 165g pack Oreos, broken into quarters
  • Icing sugar

Directions

  1. Preheat the oven to 180C/350F
  2. Grease a 20cm/8in square baking tin, then line with baking paper.
  3. Melt the butter in a pan.
  4. Remove the pan from the heat and add the grated chocolate. Leave to stand until the chocolate melts, and then stir .
  5. Whisk the eggs, egg yolks and vanilla together until the eggs begin to get light and fluffy.
  6. Add the sugar in two additions, whisking between each. Keep whisking until the mixture becomes stiffer.
  7. Pour the chocolate into the egg mix
  8. Add flour, cocoa powder, salt and a third of the biscuits and stir until fully combined.
  9. Pour the mixture into the tin. Scatter the remaining biscuits over the top, pressing them in slightly.
  10. Bake on the middle shelf of the oven for 25–30 minutes.
  11. Dust with icing sugar.

This brownie recipe is one of Thea Sophie's absolute favorites, and we like to serve it with our own recipe of home made ice cream.
